Bateu aquela curiosidade? O DOL te dá a receita completa da iguaria. Rendimento: duas porções. Tempo de preparo: 1h20

Ingredientes para o sorvete:

· 4 unidade(s) gema

· 300 grama(s) creme de leite

· 1 colher(es) de sopa jambu picado

· 60 grama(s) açúcar

· 100 grama(s) tucupi

Ingredientes para a calda 1:

· 1 colher(es) de sopa mel

· 100 grama(s) tucupi

Ingredientes para a calda 2:

· 30 grama(s) jambu

· 100 ml(s) água

· 20 grama(s) açúcar

Ingredientes para a goma:

· cumaru a gosto

· 2 colher(es) de sopa açúcar

· 100 grama(s) goma de tapioca

· 350 ml(s) água

Ingredientes para a sucrée:

· 50 grama(s) farinha de amêndoas

· 450 grama(s) trigo

· 1 unidade(s) ovo

· 100 grama(s) manteiga

· 20 grama(s) camarão seco em pó

· 100 grama(s) açúcar

MODO DE PREPARO

Sorvete

Ferver creme de leite e tucupi, levar no bowl com gemas e açúcar, voltar para a a até ponto napê. Colocar na máquina de sorvete até ficar pronto.

Calda 1

Reduzir tucupi em 1/4 e misturar o mel.

Calda 2

Bater água com jambu no liquidificador, coar e ferver com açúcar até ponto napê.

Goma

Ferver tudo junto sem parar de mexer até ponto de goma.

Sucrée

Misturar todos os ingredientes, menos o ovo, com as pontas dos dedos. Em seguida, acrescentar ovo, deixar descansar na geladeira, abrir e assar por cerca de 15 minutos a 180°c . Esfriar e quebrar em farofa.
